Hungarian fish soup

INGREDIENTS

3 kg mixed fish in slices (carp, catfish, etc.)

Optional: fish milt and roe

4 l water

2 onions, roughly chopped

3 TS sweet ground paprika

1 dried cascabel chili (halved)

15 TS salt

COOKING TIME 1,5 h
SERVES 6
  1. Start to boil the fish heads and bones in a large sauce pan. Add onions and salt.
  2. When it is boiling, stir in paprika and chili. Boil for about 45 minutes.
  3. Salt one side of the sliced fish.
  4. Remove the bones and heads and strain the fish broth.
  5. Add the slices of fish (optionally the milt and roe, too) to the strained broth and cook for about 10 minutes until fish is tender.
  6. Serve with fresh bread or ‘matchstick’ noodles.
