Serbian rolled pie

For the dough:

700 g fine white flour

1 teaspoon of salt

5-6 dl of warm water

3 spoons of oil + 0.5 dl for greasing

50g of butter

1 egg (for egg wash before backing)

Filling with cheese:

150g of white soft cheese

20g of dried mushrooms soaked in warm water

1dl of yogurt

1 egg

Salt, pepper, wild oregano

Filling with ground meat and potato

150g of ground meat

1 large potato (shredded)

1 large onion (fine chopped)

2 cloves of garlic (fine chopped)

Salt, pepper


Filling with apples and dried fruits:

1 large apple (peeled, shredded

and drained of extra juice)

3 soup spoons of honey

20g raisins

20g pitted prunes chopped

50g chopped walnuts

50g chopped pumpkin seeds

70g bread crumbs

0.5 dl oil

Cinnamon, nutmeg, cardamom (powdered)

Powder sugar for decoration

Serbian rolled pie

  1. In large mixing bowl put sifted flour salt and ¾ of water. Start kneedeng dough then add oil and rest of the water. Kneed for 10 min untill dough is soft, elastic and does not stick to fingers. Move dough to work top and kneed little bit more. 
  2. Devide dough in three pices same in size oil them well and let rest for 20min covered with plastic foil.

Cheese filling 

  1. Fine chop soaked mushrooms, crumble cheese and mix with rest of ingridients.
  2. Ground meat filling 
  3. Put chopped onion in frying pan on hot olil and sote until soft. Ad potato, fry for couple of minutes and then add ground meat, add garlic, salt, pepper. Fry and stir until meat is golden brown.

Apple filling 

  1. Mix all ingredients (exept bread crumbs and oil) in bowl.
  2. Each peace of dough first spread with hands to start and then pull carefully it over plain cotton tablecloth in all directions until it is paper thin.
  3. Sprinkle filling equally on pulled dough and then sprinkle some oil. Roll dough by raising tablecloth from one side. Shape it in desired shape and put it on baking tray.
  4. Repeat same way for meat filling.
  5. For apple filling sprinkle breadcrumbs as well sprinkle some oil and then continue as above.

When all pies are ready for backing brush whisked egg over them. 

Bake in preheated oven on 180°C for 20 min. Take it out and purr some melted butter with little water over it. Continue backing for 10 min more. 

Take it out of the oven and let it cool covered with cotton kitchen towel.
